Shoofly Pie

Ingredients

Bottom Part

  • 1 cup brown sugar
  • 1 egg
  • 1 cup molasses
  • 1/2 tsp baking soda
  • 1/2 cup boiling water
  • 1/2 cup cold water

Crumbs

  • 240g flour (~2 cups)
  • 100g brown sugar (~1/2 cup)
  • 1/2 tsp baking powder
  • 103g shortening (~1/2 cup)

Other

  • 1 unbaked 9-inch pie shell

Instructions

  1. Begin with the bottom part by stirring the egg into 1 cup brown sugar. Add the molasses. Dissolve the baking soda in the boiling water. Add the cold water, then combine with the egg mixture. Pour into an unbaked 9-inch pie shell.
  2. To make the crumbs, cut the flour, brown sugar, baking powder and shortening together until crumbly. Sprinkle on top of the bottom part.
  3. Bake at 350 degrees for 15 minutes. Reduce heat to 325 degrees and bake 50 minutes longer, or until done.
