Dylan Salad

Ingredients

  • 1 lb deli chicken (rotisserie or sliced), diced
  • 8 cups mixed greens or romaine lettuce, chopped
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup toasted pecans, roughly chopped
  • 1 cup fresh pineapple, diced
  • 1 (11 oz) can mandarin oranges, drained
  • 1/2 red onion, thinly sliced (optional)

Poppy Seed Dressing

  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Make the dressing: In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, poppy seeds, Dijon mustard, salt, and pepper until well combined.

  2. Prepare the salad: In a large serving bowl, combine the mixed greens, diced deli chicken, strawberries, blueberries, pecans, pineapple, and mandarin oranges. Add red onion if using.

  3. Serve: Drizzle with poppy seed dressing just before serving, or serve dressing on the side. Toss gently to combine.
