Ingredients
- 1 lb deli chicken (rotisserie or sliced), diced
- 8 cups mixed greens or romaine lettuce, chopped
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup toasted pecans, roughly chopped
- 1 cup fresh pineapple, diced
- 1 (11 oz) can mandarin oranges, drained
- 1/2 red onion, thinly sliced (optional)
Poppy Seed Dressing
- 1/3 cup olive oil
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon poppy seeds
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Make the dressing: In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, poppy seeds, Dijon mustard, salt, and pepper until well combined.

Prepare the salad: In a large serving bowl, combine the mixed greens, diced deli chicken, strawberries, blueberries, pecans, pineapple, and mandarin oranges. Add red onion if using.

Serve: Drizzle with poppy seed dressing just before serving, or serve dressing on the side. Toss gently to combine.
